An original implicit finite-difference numerical procedure is given for tridimensional heat conduction in the presence of solid-liquid phase change and vice versa. The technique has been successfully tested by simulating the freezing of foodstuffs, for which experimental data and other numerical results are available in the technical literature for comparison.
